Blueberry bread pudding

Ingredients

– 4 eggs
– ½ cup sugar
– 2 tsp vanilla extract
– ½ tsp salt
– 2 cups Nada Almond Milk
– Toast slices
– 1 cup blueberries
– Maple syrup, for serving

Instructions

1. The work area and all tools must be clean and sterile.
2. In a large bowl, beat eggs with sugar, almond milk, vanilla and salt until combined.
3. In a baking pan, arrange the bread slices, then add the egg mixture on top and leave to soak for about 10 minutes. Add the berries, then bake in a preheated oven at 180 degrees for about 45 minutes until the surface becomes golden.
4. Leave to cool slightly for 10-15 minutes before serving, then serve with maple syrup.
