Mexican Lasagna

Ingredients

For the filling:
-2 tbsp oil
-1 onion, chopped
-2 garlic cloves, minced
-500gm minced meat
-¼ cup sweet red peppers, cubed
-¼ cup sweet green peppers, cubed
-½ cup Nada red beans
-½ cup Nada sweet corn
-½ cup tomatoes, peeled & crushed
-3 cups tomato juice
-2 tbsp taco seasoning
-2 tsp smoked paprika
-Salt & pepper

-1 pack of lasagna noodles
-6 tbsp Nada sour cream
-1 cup yellow cheddar cheese, grated
-1 cup red cheddar cheese, grated
-1 cup mozzarella cheese, grated

Instructions

1- In a large frying pan, heat the oil, add the onions and garlic and stir for 30 seconds. Add the meat and stir until it changes color, add pepper, and stir the mixture until the meat becomes light brown.
2- Add the beans, corn and tomatoes and stir for two minutes. Add tomato juice, spices, salt and pepper. Leave the mixture on low heat until it thickens.
3- In a deep baking tray, add part of the filling and spread it well to cover the bottom. Add a layer of lasagna slices, then half the amount of meat, and on top of it half the amount of sour cream and a cup of grated cheese. Repeat the same process again, then add a layer of lasagna and top it with the rest of the cheese.
4- Preheat the oven to 180ºC, and bake the lasagna for 45-50 minutes, until the surface becomes golden.
