Red Kidney Cabbage Soup

Ingredients

  • 3-2 Tablespoons Olive oil
  • 300gm lean ground beef 
  • 1 Cup chopped onion
  • ½ Cup chopped celery
  • 2 Teaspoons crushed garlic
  • 4 Tomatoes cut into cubes 
  • 2 Tablespoons NADA Tomato Paste
  • 4 cups beef stock
  • 1 Can red kidney beans, rinsed
  • 1 Tablespoon parsley
  • 1 ½ Tablespoon Dried thyme
  • 1 Teaspoon Salt 
  • ½ Teaspoon black pepper 
  • 2 cups very thinly sliced and chopped green cabbage
  • 1 cup chopped spinach
  • Pinch red pepper flakes (optional)

 

Directions

  • Heat the olive oil in a large cooking pan and cook ground beef until it’s well browned .
  • Add the chopped onion, chopped celery, garlic, tomatoes, beef stock, kidney beans, Nada Tomato   Paste, dried parsley, and dried   thyme along with the salt & peppers into the cooking pan- Heat the olive oil in a large cooking pan and cook ground beef until it's well-browned
  • While soup cooks, thinly slice the cabbage and chop the spinach.
  • After soup has cooked for 20 mins over medium heat add the cabbage &spinach, turn down the heat to low and cook, or until the cabbage is done.
