French Mushroom Salad

Mushroom-SaladIngredients:

  • 12 whole mushrooms
  • 1 cup olive oil
  • 12 small pearl onions
  • 2 iceberg lettuce heads
  • 2 large tomatoes, sliced
  • 2 celery stalks, diced
  • 1 small lemon, juiced
  • 2 tsp NADA tomato paste
  • 1 thyme sprig, chopped
  • 1 bay leaf
  • 1 tsp coriander seed
  • Salt & black pepper

Method:

  1. Clean the mushrooms.
  2. Leave the caps whole, but chop the stems coarsely.
  3. Fry in ½ a cup of oil till soft.
  4. Add the celery, lemon juice, onions, NADA tomato paste, thyme, bay leaf, coriander seeds.
  5. Season and simmer for 20 to 25 minutes. Onions should be tender.
  6. Pour the mushrooms mixture into a serving dish and serve with lettuce and tomato.

Serves: 4

Cooking Time: 30 minutes
