Eggplant Fatteh

Appetizer Recipies English-Day 10



  • ½ kilo eggplant cut in small cubes
  • 2 tablespoons olive oil
  • 2 tablespoons oil to fry eggplant 
  • (Nada suggests cooking the eggplant 
  • in the oven for a healthier recipe)
  • 100 gm roasted pine nuts
  • 1 Large onion chopped into wings
  • Salt and black pepper as desired
  • 2 packs Nada Fresh Yoghurt 170 gm
  • 2 garlic cloves
  • Pita bread cut and roasted
  • 2 tablespoons sumac



  • Fry the onion wings in oil till it becomes golden brown
  • Fry the eggplant in oil on both sides
  • Place the eggplant in a deep tray
  • Grind 2 garlic cloves with a sprinkle of salt and mix it with Nada Fresh Yoghurt
  • Add Nada Yoghurt mixture to the top of the eggplant
  • Sprinkle with roasted bread, pine nuts, Sumac and olive oil then serve
