Creamy Broccoli Soup

  • 1/2 medium onion, finely chopped 
  • 1 stalk celery, finely chopped
  • 1 medium potato, peeled and cubed
  • 4 cups fresh broccoli, including stems, chopped
  • 1Ltr chicken or vegetable broth
  • 1 1/2 cups Nada low fat milk
  • Toast  for decoration



  1. Heat olive  oil on medium heat in a soup pot
  2. Gently sauté onion and celery for 3-4 minutes, until onion is softened. Add potato and chopped broccoli, followed by the broth and milk. 
  3. Bring to a boil, then reduce heat, cover and simmer for 20 minutes until vegetables are tender. 
  4. Allow soup to cool slightly, then transfer to a blender in 2-3 batches, blend until smooth. Return soup to pot and heat gently until ready to serve. 
  5. Before serving, add toasted bread  for decoration
  6. Serves 6



Broccoli Soup

  • 600gm chopped fresh broccoli 
  • 100gm chopped green onion 
  • 5 Tablespoons butter  
  • 2 Tablespoons flour 
  • 3 cups of chicken stock
  • 1 cup of NADA Fresh Milk
  • 4 Tablespoons Nada Sour Cream 
  • 1 Teaspoon salt 
  • ½ Teaspoon black pepper
  • ¼ Teaspoon cumin powder 
  • ¼ Teaspoon coriander (fresh or dry)
  • 3 Tablespoons lemon juice 



  • Melt 2 tablespoons of butter in medium sized stock pot, and sauté onion & broccoli until tender. Add chicken stock & salt/ spices, cover and simmer for 10 minutes.
  • Leave the mix to cool down then pour it into a blender, blend until the soup mix is like a puree 
  • In a cooking pan, over medium-heat melt 3 tablespoons butter, stir in flour and add NADA Fresh Milk. Stir until thick and bubbly
  • Add broccoli puree with NADA Sour Cream along with lemon juice, cover and simmer for 5 minutes

Serve with croutons and grated cheddar cheese on the top (If desired)
