Curried Chickpeas

Curried Chickpeas (250p)Ingredients:

  • 1 onion, chopped
  • 1 garlic clove, crushed
  • ½ tsp ginger root, grated
  • ¼ cup vegetable stock
  • 2 potatoes, cubed
  • 1 tomato, chopped
  • 2 cups chickpeas, cooked
  • ½ cup tomato paste
  • 300 tomatoes, canned
  • ¼ tsp coriander, ground
  • ¼ tsp black pepper
  • ¼ tsp cumin, ground
  • ¼ tsp cloves, ground
  • ¼ tsp cinnamon, ground

 

Method:

  1. In a large pot, sauté the onion, garlic, and grated ginger in ¼ a cup of vegetable broth for 10 minutes.
  2. Add the potatoes and fresh tomatoes.
  3. Cook and stir for 10 minutes.
  4. Add the remaining ingredients.
  5. Bring to a boil, cover, reduce heat, and simmer for about 30 minutes until the potatoes are tender.
  6. Serve hot.
