Chicken Enchiladas with Tomatillo Sauce




  • 2 teaspoons oil
  • ¼ cup chopped onion
  • 1 chopped garlic clove
  • ¼ cup chopped Roman bell pepper
  • 2 chilli peppers
  • 3 chopped tomatoes
  • Nada Tomato Paste
  • 2 chicken breasts sliced
  • Parsley
  • Nada Sour Cream


Sauce Ingredients:

  • Juice of 1 lemon
  • 2 tablespoons chopped parsley
  • Salt & black pepper
  • 3 tablespoons Nada Tomato Paste
  • Mix all the ingredients together



  • Put the oil in a pan and fry the onion, garlic and Roman bell pepper for a short period of time then add the hot chilli, tomatoes and Nada Tomato Paste.
  • Lower the heat a little then leave the mixture for a few minutes till it boils, then add the chicken and cook until tender
  • Put the tortilla bread in a plate, add to it ¼ of the chicken portion then roll and spread the prepared sauce on top with some grated cheddar cheese and parsley.
  • Put the sandwich in the oven for 5 minutes until the cheese melts at 180 ’C’.

N.B. The parsley and the cheddar cheese can be put inside the sandwich


You can also use Nada Sour Cream as a side dip
