Tray Baked Chicken with Vegetables

  • 1 Kg chicken
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon curcum
  • ½ teaspoon black pepper
  • 2 teaspoons salt
  • 3 potatoes, medium size
  • 1 red sweet pepper, medium size
  • 1 green sweet pepper, medium size
  • 1 large onion
  • 2 large tomatoes
  • 2 tablespoons Nada Tomato Paste
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 1 glass of water
  • Cooked rice


  1. Prepare a big oven tray
  2. Using a sharp knife, cut the chicken into 8 pieces or as desired
  3. In a deep bowl, mix the cumin, coriander, curcum, pepper and salt, then add the olive oil with Nada Tomato Paste
  4. Add the chicken slices to the bowel and mix well  
  5. Using a sharp knife, cut the potatoes into 4. Cut the red and the green pepper into big cubes. Add to the chicken in the bowl and mix well  
  6. Cut the onion into 4
  7. Add to the chicken and the spices in the bowl
  8. Cut the tomatoes into 4 pieces. Add to the chicken
  9. With the knife’s edge, crash the garlic clove. Add to the rest of the vegetables and chicken. Mix the ingredients well with the spices and the oil. Spread in the oven tray, adding the parsley and one glass of water
  10. Heat the oven to 200 degrees. Place the chicken and vegetable tray in oven for 25 minutes uncovered then cover with aluminum foil and cook in the oven for another 15 minutes or till the chicken cooks.
  11. Nada suggests offering boiled rice with the chicken and vegetable tray
